How I happened upon this site... hmmm, i think I got there via the crafty crow (see side bar). I fell in love with this colorful and fun lunchtime idea and it SCORED big points with the kids as well. I even got them to try some foods that they've sworn were their worst enemies! They still do not like watermelon or cantaloupe though. oh well, i tried.
So here's what I was able to scrounge up from the fridge/pantry for our muffin tin meal(starting in upper left muffin compartment):
hummus,
pita bread,
cantaloupe,
watermelon,
veggie crisps (flat earth farmland cheddar- AWESOME chips),
craisins,
jarlsberg cheese cut into star shapes,
peanut butter,
pepperoni,
ranch dressing,
carrot sticks and
honey wheat pretzels.
We made it into a "game", too. The boys (G & M shared this meal) had to make their way around the muffin tin trying something from each compartment. Not sure if that's the original idea, but it worked for them. They didn't eat all the chips and then have the carrots left over and one kid didn't get to eat all of one section before the other could get to it. Of course we also had the flip & dip rule as to not "double dip" into our dips!
What I loved best was threefold: a) easy clean-up (I did put the messy dips into muffin liners for quick cleaning), b) the comments from the boys - "wow" & "this is a delicious lunch, mama" & "thank you for making such a yummy lunch, mama" (if they only knew I made NOTHING in that tray!), and c) it was such a fun way to mix up the usual sandwiches for lunch thing.
Oh and one more thing, it was fun for the boys to try new pairings. They loved making their own "sandwiches". Here's Gabriel's pita with peanut butter, craisins and cheddar chip concoction. The reviews from the boy's were "this is delicious!"- chefs in the making!
So go and grab your muffin tray and raid the fridge and pantry. Today Katy is mixing it up a bit to get more colors in the trays.... go see the RAINBOW challenge.

LOVE it! I am going to make one for myself! And for Noah, of course. He loves to eat things out of strange containers so this is perfect. (He eats his cereal in my big liquid measuring cup. Plastic.)
I can't wait to make a list of all the yummy things to put in them!!!
I don't think you have to be a kid to enjoy this treat.

P.S. My sister managed to find a You Tube clip of Gladys' on Ellen and she got the one about loving Jesus and drinking a little and recorded it onto her cell phone and then played it for me in the car. We busted a gut laughing!
